The new rooftop restaurant, 18, which is the final part of the revamp of Rusacks St Andrews, has announced its opening date of Friday September 17.
This space joins the four-storey and 120-room hotel’s other food offerings - all-day dining concept, The Bridge, and One Under Bar. It boasts panoramic views over the dunes of West Sands Beach and the Old Course Golf Links and is named after the course’s iconic 18th hole.
“We’re currently putting the finishing touches to 18 and we can’t wait to welcome diners”, says head chef Derek Johnstone, who won Masterchef: The Professionals back in 2008. “I’m also excited about the offerings at The Bridge and One Under Bar, we truly have something for everyone across our food and beverage offering at Rusacks, St Andrews and we look forward to formally opening our doors.”
Johnstone has devised a menu that focuses on dishes cooked on their robata grill, as well as game and seafood. There will be beef from Hardiesmill Farm in the Borders, cured Scottish salmon and fresh fruit and berries from Fife farms, including Blacketyside in Leven.
Highlights from the a-la-carte menu include a starter of pig head on toast, nashi pear, bitter leaves and hazelnuts, or raw Black Isle beef, shimeji, wild rice and nasturtiums, as well as main courses including Scrabster wild brill, sea beets, pickled grapes and roasted kelp oil, and a smoked St Andrews Bay lobster, available as a half or whole, with sea buckthorn and dulce butter. Desserts include a raspberry cranachan souffle and raspberry and hibiscus sorbet, and the cocktail list pays tribute to golfing icon, Old Tom Morris, with a mixture named Young Tom Morris (Highland Park 12-year-old, strawberry, lemon, honey and Champagne).
This property is part of the Marine & Lawn collection, which is owned by Adventurous Journeys (AJ) Capital Partners, and will be joined by two additional Scottish golf properties: Marine North Berwick, due to open soon, with another ex Masterchef: The Professionals contestant, Chris Niven, heading up The Lawn restaurant, and Marine Troon in spring 2022.
