While the Michelin Stars and Bib Gourmands for 2020 remain a secret, the famous guide has released a sneak preview of some restaurants in the capital which are set to make an appearance.
Seven Edinburgh restaurants will be new to the 2020 guide, with a mix of menus from modern Italian to Spanish and French inspired.

The Michelin team said: “An eye-catching, modern restaurant perched beside the city observatory on Calton Hill; take your time climbing up here as it’s easy to get out of puff – but so worth it for the views (and the food!)”
The restaurant, which opened late last year, offers diners breathtaking views of the city and was launched in partnership with Collective – the organisation in charge of the complete revamp of the City Observatory on Calton Hill.
“A friendly, laid-back ‘restaurant and research hub’ where the dining happens communally and the sourcing of produce is paramount” say Michelin.
Opened in the summer of last year, The Edinburgh Food Studio offers guests a set tasting menu for dinner, featuring seasonal highlights such as North Uist Crab, Barra Cockles and Luing beef, aged on the bone for 8 weeks.
The Michelin Guide said: “There’s a good value set price lunch menu – or come at dinner for more ambitious dishes like ‘Squid ink tagliolini with burrata, squid ragout and vanilla’ or ‘Aged parmesan risotto with crispy pancetta, egg yolk and black pepper’.”
Located on South Bridge, just minutes from Princes Street and the Royal Mile, Mono is the only restaurant in Scotland offering this style of Italian-inspired cuisine and has quietly been making waves in Edinburgh’s foodie scene since it opened last summer.
Chef patron Maciek Zielinski said: "It is always with some trepidation that you await feedback from Michelin after they visit so it is great to see that they enjoyed their meal with us enough to include us in their “Spotlight on Edinburgh”.
"We just enjoy offering our guests a taste of Rome using the best ingredients that we can find here in Scotland and making our customers happy!”
Michelin-starred chef Tom Kitchin and his award-winning team opened their fourth restaurant, Southside Scran, in the heart of Bruntsfield in Edinburgh last year.
Featuring an open rotisserie in the middle of the brass-accented, open-plan dining room, the Edinburgh bistro’s menu will incorporate the best of Scotland’s produce, with hints of Tom’s passion for French cuisine.
Michelin said: “The latest city opening from Tom and Michaela Kitchin is a smart bistro and, like the other restaurants in their group, incorporates a ‘Nature to Plate’ philosophy. The on-view rotisserie is a real eye-catcher; French dishes with a Scottish twist might include ‘Borders roe deer pithivier with quince’ and ‘Crème caramel’.”
Described by Michelin as: "A small, six table restaurant in the southern suburbs of the city offering 5 and 8 course surprise tasting menus accompanied by natural and organic wines.
The guide praise the well-crafted dishes offer a clever balance of delicate flavours, and might include ‘Pheasant with shiitake’ or ‘Parsnip with honey’.
Merienda's concept involves an evolving menu of small plates featuring top Scottish ingredients that will change every four weeks.
Chef Campbell Mickel’s Merienda – which means snack in Spanish – opened in the Stockbridge area of the city in September last year, and aims to bring together Mediterranean flavour with the “very best of Scottish produce”.
The Michelin Guide have said of the menu: "Scotland’s bountiful larder is used to produce Mediterranean-inspired small plates like ‘Hot smoked salmon with shallot purée’ and ‘Plum fool with cinnamon sugar’."
Formerly Sweet Melinda’s, this Marchmont spot went all Alice in Wonderland in 2016. Run by a Sicilian/Canadian couple, the French inspired cooking has caught the Michelin team's attention as it is set to feature.
They said: "French-inspired cooking might mean ‘Braised rabbit leg with salsa verde and braised lentils with Morteau sausage’ or a classic ‘lemon tart with lemon sorbet and blueberry sauce’."
