Fiona Burrell of the Edinburgh New Town Cookery School offers some quick tips on cooking salmon:
"If baking in the oven, give salmon a good wash to avoid a bitter taste, then put onions, herbs and lemon inside and season with salt and pepper. Wrap loosely and check it regularly so it doesn’t dry out.
"If cooking in a fish kettle, poach the fish in water which has been boiled with onion, carrot, celery, lemon and herbs. This will bring a lovely fresh flavour to the fish."
