The long-established AA Rosette scheme recognises successful cooking at different levels across the UK. The aim of the Rosette scheme is to provide AA Members, its guidebook readers and the general public reliable information about where to eat. Two rosettes are awarded at the time of inspection to ‘excellent restaurants that aim for and achieve higher standards and better consistency’ and a ‘greater precision is apparent in the cooking, and obvious attention to the selection of quality ingredients.’
The Chester Hotel’s culinary team is led by award-winning executive chef Kevin Dalgleish who joined The Chester Hotel team in 2012, coming from Ackergill Tower, where he led the restaurant team for 10 years. Kevin heads up the kitchen for fine dining IX Restaurant and the relaxed IX Bar with the help of his 16 strong brigade. Classically trained at London’s The Savoy, Kevin only works with quality suppliers which provide proof of traceability, including: Wellocks, Campbells Prime Meat and George Campbell & Sons, Gartmorn Farm. Kevin’s signature dish is Duck Tartare.
IX Restaurant Executive Chef, Kevin Dalgleish, said: “I am delighted IX Restaurant at The Chester Hotel has received two AA Rosettes. Over the last few years I’ve seen my team go from strength to strength and it’s great to be recognised for our high standards and attention to the selection of quality ingredients.
“My approach is simple: use the finest Scottish ingredients and you can’t go wrong. Our menu weaves together the highest quality produce from Scotland’s rich larder with classic and European influences as well as inspiration drawn from my own team of talented chefs.”
“The Chester Hotel has made a great impression on Aberdeen and I’m delighted to be part of that and we will continue to work hard and aim to achieve even more Rosettes in the future!”
The Chester Hotel owner and director, Graham Wood, said: “We could not be more pleased at this recognition which is testament to the dedication of Kevin and his team who continually strive to produce the highest quality dishes with the finest ingredients from prime, local suppliers.
“We are honoured to support young local talent in our kitchen, and achieving Rosettes show the quality of young chefs who are helping to shape the fine-dining scene in Aberdeen.”
“Our intention remains to provide the most comfortable accommodation, delicious food and drink and high quality business and entertainment facilities in Scotland, and awards such as these provide an enormous boost to The Chester Hotel staff as they achieve this.”
